Detailed Procedure:
- Pre-heat Oven to 180ºC for 10 minutes. Line a baking tray with parchment paper and oil the sides of the pan.

In a bowl, sift Flour and Gluten. To the same bowl, add a teaspoon of Baking Soda and Powder and keep aside.

Now, add pumpkin puree*, oil, soy milk, an optional teaspoon of Vanilla Essence, brown sugar or Jaggery, and all the spices in a different bowl.
To puree Pumpkin, in a pan add Pumpkin and Water and boil for 10-15 minutes. Mash the boiled mixture and your puree is ready. - Whisk all the wet ingredients nicely. Now, add the dry ingredients in small proportions to the wet ingredients and fold slowly. After adding all the ingredients, pour out the batter into the lined pan.
- Put the baking pan in the oven and bake for 60 mins at 180ºC. You can top the bread with some mixed nuts and seeds and some brown sugar.

- 130g Whole Wheat Flour
- 100g Wheat Gluten*
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- Lots of LOVE
Spice Mix:
- 1/4 Tsp Turmeric Powder***
- 2tsp Cinnamon Powder
- 1/4tsp Nutmeg (Grated)
- 1/4tsp Clove Powder

2tsp Ginger Juice
Wet Ingredients:
- 80ml Olive Oil
- 200ml Soy Milk*
- 250g Pumpkin Puree
- 140g Brown Sugar*
- 1tsp Vanilla Essence***
- Juice From One Lemon***

Notes*
- In place of wheat gluten, use 120g Flour
- Use any milk or oil of your choice.
- Use any sweetener of your choice.

Quick Procedure:
- Preheat the oven.
