Detailed Procedure :

Step 1:
In your blender, add tofu, almond/soy/coconut milk, a tomato, half a boiled potato, and some beetroot (because beet makes this recipe unbeatable!). Blend all the ingredients into a thick paste. The boiled potato helps make the sauce thick and creamy. -
STEP 2:
In a saucepan (or "BHAGOLA" in Marwari—shoutout to my Marwari friends and family!), add some water and let it boil. To the boiling water, add some oil, salt, black pepper, and oregano. Once the water starts bubbling, add your packaged dry pasta and let it boil for 10-12 minutes. Meanwhile, follow step 3. -
STEP 3
In a pan, heat some oil until you see bubbles, which will take about 30-40 seconds. Once the oil is hot, add chopped onion, saunf (fennel seeds), and freshly chopped or grated garlic (grating garlic leaves larger chunks, which taste good in pasta). Next, add a bay leaf (TEZ PATTA), a pinch of cinnamon (optional), grated coconut, nutritional yeast, and brown sugar or any sweetener of your choice.
Let the onion soften and turn golden brown. Keep stirring to prevent the onion or garlic from sticking to the bottom and burning. Once the onion and garlic are golden brown, add red chili flakes and green chili paste (you can use just green chili paste if you don't have red chili flakes), and oregano or pizza/pasta seasoning. Let everything cook for another 3-4 minutes.

STEP 4
Now, add your vegan cream to the pan and give it a good stir. If the mixture seems too thick, add some pasta water (the water in which your pasta was boiling). By now, your pasta should be "AL-DENTE" (nice and ready). -
STEP 5
Drain your AL-DENTE pasta, keeping some pasta water aside in case the sauce is too thick. Add the pasta to the pan with salt and freshly ground black pepper. Stir well and cook for another 4-5 minutes.

STEP 6
Your pasta is ready to serve. For extra flavor, top it with red chili flakes and pasta seasoning. And don’t forget to add some love—it’s essential! "BON APPETIT"
P.S step 1 is actually to ask your mom about TEZZ PATTA hehe!!!

Ingredients :
VEGAN CREME
- 100g Tofu*
- 2 Large Tomato
- Half a Beetroot
- 100ml Plant-Based Milk*

Pazztaa prep
- 100g Packaged Pasta
- Little bit of oil
- 1/2 tsp Oregano
- Salt and some Black Pepper
- Lots of love
PAZZTAA SAUCE
- 15ml Olive Oil
- One medium-sized Onion
- 5-6Garlic shallots
- One small TEZ PATTA**
- 1/2tsp SAUNF/ Fennel seeds
- 15gGrated coconut
- An optional dash of cinnamon**
- 10g oregano or more
- 1 tbsp Green Chili Paste*
- 1tsp Red Chili Flakes
- 2tsp Brown Sugar*
- SALT as per your preference
- 5-6 Black Pepper Kernels (Crushed)
- 5g Nutritional yeast**
- 30mlTomato Sauce
- NOTE:
- If you’re not a vegan, you can substitute the tofu with paneer or cottage cheese.
- If you do not prefer plant-based milk, you can either use water or use milk.
- If you do not have brown sugar, you can use any sweetener of your choice
- ** marked ingredients are optional.
- I recommend grating the garlic rather than finely chopping it…again feel free to choose whatever option comforts you.
- You can add any vegetable of your choice after your pasta sauce is ready.
Quick Procedure
- Start by blending the VEGAN CREAM ingredients into a thick paste, using a blender.
- Prep your pasta.
- In a saucepan, put some oil, onion, garlic, fennel seeds, tezz–Patta, an optional dash of cinnamon and nutritional yeast, chili flakes, grated coconut, oregano, salt, and black pepper, and let it all turn golden brown.
- Add in the VEGAN CREAM SAUCE.
- Let the whole pasta sauce cook for about 4-5 mins. You can use the pasta water kept aside after the pasta was ready to thin pasta sauce if the pasta sauce seems to be too thick.
- Once the pasta sauce is ready, add in the ready pasta(boiled pasta) and let it all cook for another 2-3 minutes.
- Tada your VEGAN AMAZE PASTA is ready.
- Garnish your PAZZZTTAA with some red chili flakes, oregano, and ofc some LOVE..!!
- Some quick random facts I thought might be useful for you:
- MIXER is used to whip cream and BLENDER is used to blend/grind ingredients together to get a paste
- Nutritional Yeast is one of the rare vegan sources of B12 found mostly in animal products. B12 helps the body to create DNA and RBCs and is also associated with happiness. YES if you’re depressed, your body has a low level of vitamin B12.
