Detailed Procedure:
- Start by sifting the flour mix and keep aside. After sifting the flour, preheat the oven to 180ºC for about 10 minutes.

Next, combine softened Vegan Butter, powdered Sugar , or any other sweetener of choice, and Cardamom powder in a big bowl.
Whisk it all nicely. - Now, add the ready-sifted flour to this wet mixture along with some baking powder and knead a dough.
- Once, the dough is nicely kneaded, roll out cookies of the desired size using your palm or use an ice cream scoop to do so. Spread out these cookies on a baking tray lined with parchment paper and put them in a preheated oven and bake at 180ºC for about 20-22 minutes.
- TADDAAA...your VEGAN NAANKHATI is ready. Serve them with a cup of tea or coffee and we never forget the most important ingredient...you know what it is right?....yes....LOVE...!!!

Wet Ingredients:
- 110g Vegan Butter
- 15ml Coconut Milk
- 100g Powdered Sugar**
- 1/4 Tsp Cardamom Powder
- 1 Tsp Baking Powder
- Lots of LOVE
Flour Mix
- 100g Whole Wheat Flour
- 25g Chickpea Flour
- 25g Wheat Gluten*
- A pinch of salt
Notes*
- * In place of Wheat Gluten, use more flour
- **Use any sweetener of choice
- P.s: I’ve marked some of the ingredients I use.

Measurement and storage:
- 1 Tbsp = 15 grams
- 1Tsp = 5 grams

Quick Procedure:
- Start by sifting the flour mix. Once sifted, preheat the oven.
- Combine all the wet ingredients in a big bowl and whisk nicely.
- Now, add the flour mix to the bowl of wet ingredients and knead a dough.
- Out of this cookie batter, roll out cookies of the desired size using your palms, or an ice cream scoop.
- Spread out the cookies on a lined baking tray and bake for 20-22 minutes at 180ºC.
- Taadaaa your VEGAN NAANKHATAI is ready. Serve them with the most important ingredient…yes…LOVE..!!!

When you say “use more flour” instead of adding wheat gluten, how much more? 25g?
In place of 25g of wheat gluten, use 25g more of wheat flour. If you try the recipe, do let me know how it went 😊
