Detailed Procedure:
- To prepare the filling, start by warming up a pan over medium heat. Once it's nicely heated, drizzle in some coconut oil, letting it melt and sizzle to release its aromatic essence.
- Next, toss in freshly grated coconut along with powdered jaggery. For the best flavor and texture, try to avoid the brown part of the coconut. Allow the jaggery to melt gently in the pan, infusing the coconut with its rich sweetness before continuing.
- Finally, sprinkle in some fragrant cardamom powder and a touch of freshly grated nutmeg. Your filling is now ready—turn off the heat and let it cool. While it cools down, you can start preparing the dough.
- For the dough, take a large bowl and combine all the rice varieties listed. Give them a thorough rinse with water, but only once. After the rice is well rinsed, spread it out evenly on a tray and allow it to air dry for 7-8 hours or overnight.
- Once the rice is completely dry, grind it into a fine flour and set it aside. Next, heat a pan and add water, bringing it to a boil. Once boiling, stir in some oil and a pinch of salt.
- Gradually add the rice flour to the boiling water, stirring continuously with a wooden spoon. Once the flour is well incorporated, don't over-stir—a minute should do the trick. Then, cover the pan and set it aside, allowing it to cool for 5-10 minutes.
- After 5-10 minutes, use a spoon to start kneading the dough for about 2 minutes. If the dough is still comfortably warm, switch to using your hands. Knead until the dough is smooth, adding a bit of oil if needed to achieve the right consistency.
- Keep your dough covered with a damp cloth to prevent it from drying out. Take a small portion of the dough and roll it into a flat circle. Place a small amount of filling in the center, then gently fold and pinch the edges together at the top. If you prefer, you can use a mold to shape the dough.
- Once all the modaks are shaped, steam them for 12 minutes until they're perfectly cooked and tender.
