Detailed Procedure:
- Start by preheating the oven at 150º C for 20 minutes. The temperature here is low because we're gonna bake the granola for a longer period at a low temperature to make it nice and crisp. Baking at a higher temperature will result in burning the granola.
- Meanwhile, start chopping your chocolate into tiny pieces to make them easier to melt. After chopping the chocolate, melt the chocolate either in a double boiler or in a microwave. If using the microwave, put the chopped chocolate in a microwave-safe bowl and then put it in the microwave for 30 seconds. After 30 seconds, give the melting chocolate a gentle stir and then put it back in the oven and repeat. The reason I'm asking you to give the melting chocolate a gentle stir is that giving a harsh stir would make the oil separate and the oil will float on top of the chocolate. So, please be careful and do not give a harsh stir to the melting chocolates, and show some love to your love (chocolates) hehe. The microwave process would take around 3-4 intervals of 30 seconds for the chocolate to melt completely. If using the double boiler method, please be careful and do not let the water or the water vapor come in contact with the chocolate. If the chocolate comes in contact with the water or the water vapor, this might make the melting chocolate mixture lumpy.
- Once the chocolate is melted, in the same bowl, add in either oil, peanut butter, or any butter(like- almond, hazelnut, cashew nut, any nut butter) and an optional half a teaspoon of vanilla essence or any other essence you like. If you chose to put any nut butter, put the mixture of the nut butter and melted chocolate back in the oven for 20 seconds, and then give the mixture another gentle stir.
- Once, the wet ingredients have melted nicely together, creating a runny liquidy mixture, it's time to look after the dry ingredients. In a big mixing bowl, put some rolled oats, nuts, and dried fruits of choice, an optional teaspoon of sieved instant coffee powder, chocolate chips, a pinch of salt, and protein powder. And give it all a good stir. If you've been suppressing your harsh stirs until this point, go ahead, give those dry ingredients a good harsh stir hehe.
- Now, add small proportions from the dry ingredients to the bowl of wet ingredients and mix. Keep on adding small-small proportions from dry ingredients to the bowl of wet ingredients and give them all good stirs.
- Once all the ingredients are mixed nicely, on a baking tray, set a butter paper. I prefer using butter paper as it helps in preventing the granola from sticking to the bottom. If you don't have butter paper, you can coat your baking tray with a layer of oil. After getting your baking tray oven-ready, pour out the granola mixture on the tray and align it in the shape you like. If you like your granola clustery, shape your granola clustery on the tray. If you do not like clustery granola, make sure the granola mixture you shape on the tray is not clustery.
- After setting the granola mixture in the desired way, put the baking tray in the oven and let it bake for 30-35 minutes at 150º .
- Once your granola is ready, leave it out to harden and get crispy. Leave it for 20-30 minutes. Be careful during the rainy season. Your granola might get soggy if left out for too long. If you're trying this recipe during the rainy season, leave your granola inside the oven for 30-35 minutes and make sure the oven isn't switched on hehe.
- Now, in a serving bowl or a glass put a layer of your favorite fruits and over that a layer of granola and top that all up with a layer of dairy-free yogurt, and repeat until it makes your heart happy hehe. On top of all that we add the most important ingredient...you know what I'm gonna say...OFC LOVE..!!!
- Tadaaaa your Vegan Chocolate Granola Parfait is ready.
