Detailed Procedure:

Let's start by grating some tofu. The way you're supposed to grate tofu here is in a way that you have as smaller pieces of tofu as possible.
The drill is to grate slowly and in a very minimal motion. Instead of grating tofu up and down, grate it from left to right. Do not grate in a way that you'll be left with longer strands of tofu. Grate tofu as fine as you can. You can crumble the tofu as well or process it in a food processor. Next, let's get our spices ready. - After the preparation of tofu, let's get our spice mix ready. In a small bowl, add Cumin Powder, Salt, Black Pepper, Turmeric, Amchur powder or Dried Mango powder, Kashmiri Lal Mirchi Powder, Coriander Seeds Powder, some Garam Masala, some Dried Mint leaves(OPTIONAL), and lastly some Kasuri Methi.

VITAL WHEAT GLUTEN
In a big mixing bowl add some vital wheat gluten. Vital Gluten from Wheat is irreplaceable in this recipe. Gluten is the ingredient that does wonders in this recipe. After adding gluten, add in the spice mix and mix once. Next, add some ginger garlic paste. Now, start folding the flour and spices in the dough by slowly adding water. You wouldn't need a lot of water. Knead a dough out of the ingredients folded so far.

Add some sieved Chickpea Flour or Besan and knead again. I like to sieve the flour before adding it to any mixture or any recipe as sieving the flour helps in avoiding lumps.
After kneading again, lastly, add some oil and knead for one last time. The kneading wouldn't require more than a minute or two. -
Once your dough is ready, roll small balls out of the dough. Now, you can either steam or boil your V Chicken. If you want the texter to be chewier, steam it. If you want the texture to be comparatively softer, boil the balls.
Steam for 20 minutes and boil for about 1-2 minutes, in hot boiling water. - Taaaddaaa...you VEGAN CHICKEN is ready. You can hop onto my recipe on Vegan Chicken as well or use this Vegan Chicken in some other recipe as well.

- 200g Wheat Gluten
- 15g Chickpea Flour
- 60g Tofu(Grated)*
- 75ml or more Lukewarm Water
- Salt
- 1 tsp Oil
- 1/4 Tsp Black Pepper Powder
- 1/4 Tsp Turmeric Powder
- 1tsp Ginger Garlic Paste
- Lots of LOVE
Optional Spice Mix
(Recommended)
- 1/2 Tsp Dried Mint leaves
- 1 tsp Garam Masala
- 1/2 tsp Amchur Powder/ Dried Mango Powder
- 1tbsp Coriander Powder
- 1/2 tbsp Cumin Seeds Powder
- 1/4tsp Kasuri Methi
- 1 Tsp Kashmiri Lal Mirchi*
- If you do not follow a vegan lifestyle or diet, you can use paneer in place of tofu.
- If you do not have Kashmiri Lal Mirch, use Chili Flakes and reduce the quantity to 1/2tsp or according to your taste.
- P.s: I’ve marked some of the ingredients I use. Protecting endangered species is an important measure for ecological balance.
Quick Procedure:
- Add wheat gluten and chickpea flour in a big mixing bowl.
- Next, add the spices and grated tofu.
- Add some water and knead a dough.
- Now, add some oil and knead the dough again.
- Once the dough is ready, roll some balls out of the dough.
- Either steam the balls if you like a chewier texture or boil the balls if you like a softer texture.
- Taddaaa your Vegan Chicken is ready. Use further with the most important ingredient…yes!! LOVE!!

Is there any alternative for kasuri methi ?
You may use finely chopped coriander leaves or DHANIYA but, honestly Kasuri Methi is irreplaceable. I highly recommend you to get a package of kasuri methi.
