This dairy-free CHAI is from the very ‘heart’ of an Indian household. In an Indian household, mornings are GOOD only if started with a cup of CHAI. So, here’s a recipe to make your mornings GOOD..!!

Detailed Procedure:
- Start by adding water in a BHAGOLA / PATEELA/ MILK PAN. And let the water boil. It'll take around 2-3 minutes for the water to boil. Also, it depends on the quantity of water. This recipe is a single serving CHAI recipe which is why it'll take 2-3 mins for the water to boil. If you use more water, it'll take more time.
- Once the water is boiled, add in the tea leaves or CHAI PATTI, GUR/ any sweetener of your choice. I use GUR(jaggery) because I like the taste of jaggery in chai. Once you've added the sweeter, give the mixture a little stir to prevent the sweeter from sticking to the bottom of the pan. You may not stir if you're white sugar cause it doesn't stick and gets dissolved quickly. Since I'm using jaggery and it takes more time to completely get dissolved, I prefer giving a little stir to the mixture. Once you've added the sweetener and the tea leaves, let the mixture boil for 3-4 minutes.
- While the mixture gets boiled, in a mortar, grind the ingredients of 'tea-spice-mix', i.e 3-4 Cloves, one medium-small stick of Cinnamon, 3 whole Cardamoms (pods along with the seeds), and an optional small piece of Star Anise. Grind that all up using a pestle. If you feel lazy about grinding them, you can directly add them to the pan. Grinding helps the spices do the magic and enhances the flavor and the taste of the CHAI. After grinding the ingredients and ofc after grinding hard in life, add the grounded spices to the pan by your grounded self. And please don't forget to laugh at my pun cause I'm so fun hehe.
- After adding the spices, let the spice-added mixture boil for the next 4-5 minutes. Boiling for a longer period helps to extract more and more of the flavors. BUT, do not over-boil hehe.
- After 4-5 minutes, add in grated ginger. Now, we have to keep aside our lazy selves and add in the GRATED ginger. Trust me, grating the ginger does wonders to you CHAI. Also, you can crush the ginger in the mortar you used before for grinding the spices. After adding the ginger, let it all boil for next 2-3 minutes. If you're running late, you can add the grated ginger with the grounded spices as well. At every step I'm asking you to wait for 2-3 minutes as doing so will help your ingredients to bond well in the chai, giving you the best results. As we all know, "THE OLDER THE FRIENDSHIP, THE STRONGER THE BOND", hehe.
- Now, add in the dairy-free milk. If not vegan, add milk of your choice. I use soy milk because it has the highest amount of protein compared to any other plant milk. I must state a fact here that soy milk has a sour taste in the beginning. You'll feel a little bitter taste when you start using soy milk. I've been using soy milk for the past 2 years, so, I'm pretty used to the taste of soy milk. After adding the milk of choice, wait for 8-10 minutes and let the spices do wonders to your CHAI.
- You know the CHAI is ready when you see a thin layer on top of your CHAI.
- TADDAA... your CHAI is ready. Sieve and serve it in a cup. Do we forget LOVE? NOOO right!!
- Enjoy your CHAI served with LOVE...hehe...!!!!

Ingredients:
CHAI SPICE MIX / MASALA
- 3-4 Cloves
- 1 Small-medium stick of Cinnamon
- 3-4 Whole Cardamom pods
- A tiny piece of Star-Anise(about 1/6th size of your finger)***
- SOME LOVE HEHE

- If you’re not a vegan, you can use any milk of your choice.
- You can use any sweetener of your choice.

Quick Procedure:
- Start by boiling water in a milk pan.
- Add tea leave/CHAI PATTI and sweetener of choice and let it all boil for 3-4 mins.
- Meanwhile, grind your ‘CHAI SPICE MIX’, in a mortar. After 3-4 minutes, add the spice mix or the chai masala to the pan.
- Let the spices added mixture boil for another 4-5minutes and then add in your grated ginger.
