Detailed Procedure:
- Start by lightly toasting sesame seeds, coconut flakes and some peanuts or groundnuts. Toast them for about 2-3 minutes or until they turn aromatic.
- Transfer the toasted ingredients to another bowl and in the same pan, heat some coconut oil. Once heated add gur or jaggery.
- Now, keep on stirring the jaggery and oil mixture until the jaggery melts completely. Also, do not overheat jaggery as this make your chikki too chewy. Switch off the flames once the jaggery melts.
- Now, before combining everything, lay out a sheet of parchment paper and put some oil on it. Keep another parchment paper ready along with a rolling pin.
- Optional step: Add some cardamom powder along with some ginger powder.
- Once the jaggery has completely melted, add the toasted ingredients to it and combine everything.
- Transfer the chikki mixture over the parchment paper and then cover the mixture with the other parchment paper. Using your hands, flatten the PASTE. Once you're able to flatten it a little, use the rolling pin to thin out the chikki according to your desired thickness.
- Lastly, cut the chikkis into the desired form. You can cut out bite-sized chikkis or you may cut them in any desired shape. Let the chikki harden for a while and there you goooo!!!
