Protein rich Vegan kheer
Kheer is an Indian dessert made with cow milk, sugar, dry fruits, rice, and cardamom powder. Growing up, I used to love love love Kheer a lot!!
But, after I turned vegan, I couldn’t have Kheer until I figured out a recipe to make vegan Kheer that resembles Rabdi(Another Indian Dessert) as well. This Vegan Kheer is a must-try recipe and I promise you, you’ll come back and use the same recipe again.

Detailed Procedure:
- Start by boiling Brown Rice in a pan. Transfer the boiled Brown Rice to a bowl and keep it aside.

Now, in another pan, heat Soy Milk and Coconut Milk. Let the MYLK* boil for 7-8 minutes or until the quantity reduces by 1/6th. At this point, add the cooked brown rice and the soy isolate. While adding the soy isolate, add small sifted portions. Do not add the whole scoop at once. The point behind the small proportion is to avoid lumps.
*MYLK is a term used for Vegan Milk. - After adding the soy isolate, the kheer will become very thick. If you do not have Soy Isolate, you can use vegan protein powder(Vanilla) or skip it. If you don't want your kheer to be too thick, either add more mylk or water. Now, add Powdered Sweetener (I used Threaded Mishri) and Cardamom Powder. Keep on stirring and do not leave the Kheer unattended.
- Lastly, add dried fruits, nuts, and Soaked Saffron Strands. I used Pistachio nuts. You can use Kishmish (Raisins), Cashew Nuts, Almonds, or any other dried fruits or nuts.
- TADDAAA...your VEGAN KHEER is ready. Serve it with the most important ingredient...you know what it is right?....yes...LOVE...!!!

Quick Procedure:
- Boil Brown Rice.
- Heat mylk in a pan (7-8 mins).
- Add Cooked Brown Rice to the Mylk with Sifted Soy Isolate.
- Keep on stirring.
- Add powdered Sweetener(I used Mishri).
- Stir again.
- Add dried fruits, nuts, and soaked Kesar or Saffron Strands.
- Cook for another 5 minutes.
- Taadaaa your Vegan Kheer is ready. Serve it hot and top it all up with the most important ingredient…yes…LOVE..!!!
