Procedure:
- Step 1: Make the Flax "Egg" Start by preparing a flax egg, an essential binding ingredient in vegan baking. Combine flax meal with hot water in a small bowl, stirring well. Set it aside for about 5 minutes to thicken.
- Step 2: Mix the Dry Ingredients While the flax egg thickens, add all the dry ingredients to a large mixing bowl. Sift the flour to remove any lumps and ensure a smooth, even texture in your vegan cookie dough.
- Step 3: Combine the Wet Ingredients In a separate bowl, add the melted vegan butter or oil. Then, add the remaining wet ingredients and whisk everything together until smooth and well combined. This mixture will add moisture and richness to your vegan cookies.
- Step 4: Chill the Cookie Dough Once your cookie dough is fully mixed and ready, cover the bowl and let it refrigerate for 24 hours. Chilling the dough enhances the flavors and improves the texture, giving you perfectly soft and chewy vegan cookies.
- Step 5: Shape and Chill the Cookie Dough Balls After 24 hours, roll the cookie dough into small balls and arrange them on a tray lined with parchment paper. Refrigerate the cookie balls for another 10 minutes to help them hold their shape while baking.
- Step 6: Preheat the Oven While the cookie balls are chilling in the refrigerator, preheat your oven. This ensures it's at the perfect temperature when you’re ready to bake, helping the cookies cook evenly.
- Step 7: Bake the Cookies Bake the cookies at 180°C (350°F) for 20-25 minutes, or until the edges turn golden brown. Remove the cookies from the oven and let them cool for 10-15 minutes. Then, place them back in the oven at a higher temperature of 250°C (480°F) for an additional 5 minutes. This extra bake gives them a delightful crispiness on the outside.

- 300g Flour
- 2 tsp Cornstarch
- 1/2 tsp Salt
- 1 tsp Baking Soda
- 1.5 tbsp Flax Meal
- Lots of LOVE
Wet Ingredients:
- 170ml Vegan Butter*
- 250g Brown Sugar
- 2tsp Vanilla Extract
- 200g Chocolate Chips/Chunks
Notes*
- * If you do not have vegan butter, use oil. Use 150ml of oil.
Measurement and storage:
- 1 Tbsp = 15 grams
- 1Tsp = 5 grams
