
Procedure:
- Step 1: Prepare the Flax Egg: Start by making the flax egg. In a small bowl, combine flaxseed meal with hot water and let it sit for 2-3 minutes to thicken. Pro Tip: If you don’t have flaxseed meal, you can easily make some by grinding whole flaxseeds into a fine powder using a blender or coffee grinder. It’s always handy to have some flaxseed meal ready for vegan recipes like this one!
- Step 2: Prepare the Baking Tin and Oven Line your baking tin with parchment paper to prevent sticking, then preheat your oven to the desired temperature. This ensures the oven is ready by the time your batter is mixed.
- Step 3: Combine Wet Ingredients In a large mixing bowl, add all the wet ingredients, including the flax egg you've prepared earlier.
- Step 4: Sift and Mix Sift in the flour and coffee powder directly into the same bowl with the wet ingredients. Gently fold everything together until just combined. Tip: Be careful not to overmix, as this can make the brownies dense rather than soft and fudgy.
- Step 5: Add Sugar and Chocolate Now, mix in the sugar and chocolate chunks. Stir everything together until the ingredients are well combined, making sure the chocolate is evenly distributed throughout the batter.
- Step 6: Final Touches Lastly, add the salt and baking soda. Give the batter a quick but thorough mix, then immediately transfer it to the prepared baking tin.
- Step 7: Bake Bake in the preheated oven until the brownies are set and a toothpick comes out with a few moist crumbs. Allow them to cool before cutting into squares for the best texture. I baked mine at 180℃ for 30 minutes.

- 175g Chunky Chocolate*

- 5g Instant Coffee Powder

Wet Ingredients:
- 80ml Oil
- 100ml Almond Milk
- 2-3tbsp Water for "flax egg"
