Detailed Procedure:
- Start by sauteeing Methi or Fenugreek Leaves in oil for 6-7 minutes on low flame. This helps in reducing the bitter taste of Methi Leaves. Please do not skip this step. You can also a teaspoon of sugar or any other sweetener if you want your desired dish to be sweeter. Next, transfer the sauteed Methi to a bowl.
- In another pan, add some oil and let it heat. Add saunf or fennels seeds, green chilies, ginger, garlic shallots, onion, and tomato. Cook all that for 10 minutes. Next, add some water and some cashews. Cover and cook for another 10 mins and blend.
- Next, in another pan put some oil and put it on medium heat. Once you see some flames coming out of the oil or you see some bubbles, add in saunf or fennel seeds. Next, add bay leaf, pureed tomato onion, and spices. Mix well and cook for 5 -6 mins. Next, add the blended creamy paste, the sauteed methi, coconut milk, and some boiled peas. And oh! Don't forget salt hehe.
- TADDAAA...your VEGAN METHI MUTTER MALAI is ready. Top them with the most important ingredient...you know what it is right?....yes....LOVE...!!!
Ingredients:
CREAMY VEGAN MALAI SAUCE
- 1 tbsp Vegan Butter*
- 1/4 Inch Saunf* (Fennel seeds)
- 1 medium size Onion
- 5-6 Shallots of Garlic
- 1/4 Inch Ginger
- 4 medium sixed Green Chilies
- 1 Medium Size Tomato
- 15 Cashews
- Lots of LOVE
Sauteed Methi

1 cup (200g)
Methi(Fenugreek leaves) - 1 Tbsp Oil
Final Tadka
- 1 Tsp Oil
- 1 Tsp Cumin seeds
- Pureed paste of one tomato and one Onion
- 3/4 Tsp Ginger-Garlic Paste
- 1/4 Tsp(2 Pods) Cardamom Powder
- 1/4 Tsp Cinnamon Powder(1/2 Inch)
- 1/4 Tsp(5 Kernels )Black pepper powder
- 1 Tsp Coriander Powder
- 1 Tsp Garam Masala
- Salt
- 1 Tsp Gurr (Jagerry powder)*
- Blended paste of the creamy malai sauce prepared before
- 180g Boiled Peas (Mutter)
- 100ml Full Fat Coconut Milk
Notes*
- Use oil if you do not have vegan butter.

Quick Procedure:
- Start by sauteeing Methi in Oil.
- Next, in a pan add oil, fennel seeds, onion, ginger, and garlic, and let that all cook for 5 mins.
- Moving further, add green chilies, Tomato, some water, salt, and cashews.
- Cover and cook for 10 mins. aaa aaa your savory pancakes are ready. Serve them hot and top them up with the most important ingredient…yes…LOVE..!!!
